kcalIt’s completely meatless, but this vegan take on my Costco chicken salad is just as creamy and tasty.
Ingredients
2 15.5-ounce cans chickpeas about 3 ¾ cups
2 tablespoons celery minced
2 tablespoons yellow onion minced
2 tablespoons parsley
4-5 tablespoons vegan mayonnaise
2-3 teaspoons vegan Dijon mustard plus more to taste
½ teaspoon salt
Directions
- Transfer the liquid and chickpeas from both cans into a medium saucepan. After ten minutes of simmering over medium heat, strain and place the chickpeas in a colander or strainer.
- Empty the drained chickpeas into a big bowl. Mash the chickpeas with a fork or potato masher until the right consistency is reached.
- To the mashed chickpeas, add the celery, onion, parsley, vegan mayonnaise, vegan Dijon mustard, and salt. To fully combine all of the ingredients, give it a good stir.
- If desired, refrigerate the chickpea salad before serving it immediately on toast or in lettuce cups with your favorite toppings.
