Ingredients
1 1/2 pounds trimmed green beans, cut into 2 to 3-inch long pieces
Kosher salt
1/2 cup finely chopped red onion (or shallots)
2 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
3/4 cup chopped fresh basil leaves
3/4 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
Freshly ground black pepper
Directions
- Soak the onions: Put them in a small dish of water with some chopped onion. This will help take the edge off the onions. As you finish preparing the remaining salad, let it sit.
- Blanch the green beans: Place two tablespoons of salt in a large pot and bring it to a boil with water. After adding the green beans to the water, blanch them for no more than two minutes, or until they are crisp but still barely cooked.
Young beans that are fresh should cook fast. It could take longer for older, harder beans. - Shock in cold water: Set up a big bowl of ice water and start boiling the beans. When the beans are done, halt the cooking process by moving them from the boiling water to the icy water using a slotted spoon.
Remove the red onions and green beans from the water. - Toss with red onion, balsamic, and Parmesan: In a big bowl, combine the green beans, chopped basil, and red onion. Add a small amount of olive oil and toss to coat. Add the Parmesan cheese and balsamic. To mix, toss. Add salt and freshly ground black pepper to taste.
Until ready to serve, let cool.
