Tasty Creamy Avocado Pasta Meal

We created our favorite pasta meal, Creamy Avocado Pasta, with the few ripe avocados left over from our Guacamole Grilled Cheese Sandwiches. I didn’t want them to go to waste. Though it might not be the most attractive pasta meal, it could be the most delicious. I promise you this. This pasta will make any avocado lover very happy.

In fifteen minutes, you can have this tasty pasta dish on the table. All you need to do is prepare the basic sauce and cook the pasta (we used whole wheat spaghetti, but any kind will work).  In a food processor or blender, add avocado, garlic, fresh lime juice, cilantro, salt, and pepper to make the sauce. Process until smooth. Once the pasta is heated through, combine it with the sauce. I said it would be simple. It’s a creamy, thick, delicious pasta. I adore that no cream or butter is used. Without assistance, the avocados make a creamy, silky sauce. If you use gluten-free pasta, this recipe can be made vegan, vegetarian, or gluten-free.

This spaghetti meal would be perfect to eat any night of the week. One of our “go to” meals when we’re in a hurry but still want to eat delicious home cooking is this one. This Creamy Avocado Pasta is a simple, healthful recipe that will definitely satisfy your palate.

In 15 minutes, you can have this wonderful Creamy Avocado Pasta on the table. It’s a “go-to” meal for us.

Ingredients

  • 6 ounces pasta We used whole wheat spaghetti

  • 1 large ripe Avocado pitted and peel removed

  • 1 tablespoon fresh lime juice

  • 1 clove garlic minced

  • 1/4 cup chopped fresh cilantro

  • 1/2 teaspoon kosher salt or to taste

  • Freshly ground black pepper to taste

Directions

  • Start by bringing a medium-sized pot of water to a boil. After adding salt to the water and cooking the pasta for 8 to 10 minutes on medium heat, the pasta should be al dente.
  • In a food processor or blender, combine the avocado, garlic, lime juice, cilantro, salt, and pepper to make the sauce while the pasta cooks. Process till creamy and smooth.
  • After the pasta is cooked, rinse it and transfer it to a big bowl. Once the pasta is fully coated, add the sauce and toss again. If preferred, add more salt and pepper for seasoning. Serve right away.
